In our latest Q&A they share more on how they are shaping the next generation of hospitality professionals.
How does your company support the development of skills and careers in the hospitality industry?
At HIT Training, our mission is “Upskilling Businesses. Changing Lives.” As the market-leading apprenticeship and training provider for the UK hospitality sector, we deliver real-world learning in partnership with employers across the country.
Our Chef and Hospitality Academies – and our award-winning range of apprenticeships blend hands-on workshops, immersive training, masterclasses and workplace experience to equip learners with transferable skills, knowledge, confidence and professionalism.
We embed sustainability, seasonality, provenance, waste minimisation and cost awareness into core learning outcomes – reflecting the real challenges and expectations of modern hospitality operations. Every apprentice is supported by a dedicated Vocational Trainer and receives tailored one to one coaching to support progress from entry-level through to senior leadership.
What role do you think suppliers and service providers play in shaping the next generation of hospitality professionals?
Suppliers and service providers have a vital role to play in nurturing new talent. By sharing knowledge, setting high standards, and engaging with learners directly, they help apprentices understand what excellence looks like across the industry.
We see education as one of the most powerful ways to future-proof the hospitality workforce, creating skilled, resilient teams who deliver consistent quality and guest experiences. Our training model is built to support retention, progression and business impact.
Can you share a success story where your business helped someone grow or advance in their hospitality career?
Chef Louisa Ellis is a great example of how apprenticeships can kickstart a successful career. Louisa began her journey with HIT Training, gaining valuable experience and skills while working in professional kitchens.
In 2017, she reached the final three in MasterChef: The Professionals, impressing the judges with her creativity and technical skill. Two years later, she returned to the competition and won MasterChef: The Professionals: A Festive Knockout, thanks to her standout performance in the Christmas leftovers skills test.
Now running her own private dining company, Louisa credits her apprenticeship with giving her the confidence and foundation to build a business on her own terms. “The apprenticeship gave me the chance to learn whilst working. I developed so many different skills, not just in cooking but in understanding people, and that really helped me launch my business.”
How are you adapting your service or products to meet the evolving needs of a younger, more diverse hospitality workforce?
We review and refresh our training materials constantly to make sure they stay relevant to today’s workforce. That means listening to learner feedback, understanding how the industry is changing, and incorporating new approaches to delivery.
Today’s apprentices expect flexibility, digital access, and purposeful learning. Our programmes are built to meet those expectations without compromising on quality or outcomes. Whether it’s through blended learning, updated content, or new engagement tools, we aim to give every learner a valuable and supported experience.
What qualities do you believe are most important to nurture the next generation of hospitality professionals?
Technical skills are essential – but so is mindset. We focus on developing empathy, emotional intelligence, and the ability to communicate well in a team. These qualities are what help people not just succeed, but thrive in hospitality.
We also believe in showing learners that there is a career path ahead of them. When apprentices can see their progress and feel that others are investing in them, they’re more likely to stay, grow, and lead in the future.
