Eno has trained under Lisa Goodwin-Allen at Northcote since the age of 15, beginning on Saturdays while he was still at school before entering Northcote’s apprenticeship scheme at 16. His career is built on a foundation of strong mentorship, steady dedication and an ongoing eagerness to learn.
Strong Mentorship and Advice
Naturally, Eno cites Lisa Goodwin-Allen as having had the greatest impact on his development. He feels the competition process has taught him a lot about his capabilities and about the industry as a whole. As such he’s keen to encourage fellow young chefs to compete, advising them to enjoy the process, learn as much as possible and connect with new people.
The most valuable piece of advice Eno’s received in his career is to have confidence, keep your chin up and not second guess yourself, something he hopes to take into the final with him.
Signature Style and Final Menu
Eno’s signature style is all about showcasing his ingredients and allowing distinct elements to shine clearly on the plate. He says he likes to be able to taste and identify each element of the dish.
For his final menu, Eno says he is aiming to elevate classic dishes and flavour combinations and refine them, in order to take them to another level.
Future Goals
With an ambition to travel the world experiencing and learning about different cultures and cuisines, Eno feels winning the competition would be his greatest achievement to date.
